1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup fresh strawberries, sliced

1 tablespoon lemon juice

1 tablespoon sugar (for the strawberries)

Mini taco shells (store-bought or homemade)

Whipped cream for garnish

Fresh mint leaves for garnish (optional)

Prepare the Strawberry Filling: In a medium bowl, mix the sliced strawberries with lemon juice and sugar. Toss gently to coat and set aside to macerate for about 10-15 minutes.

    Make the Graham Cracker Shells: In a bowl, combine the graham cracker crumbs with melted butter until the mixture resembles wet sand. Press this mixture into the shapes of taco shells using mini taco molds or by shaping them on a baking sheet lined with parchment paper.
