2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

2 large eggs

1 teaspoon vanilla extract

4 oz cream cheese, softened

1/2 cup powdered sugar

1/2 teaspoon lemon juice

1 cup fresh strawberries, sliced

2 tablespoons butter (for cooking)

Whipped cream (optional, for serving)

In a large mixing bowl, combine flour, sugar, baking powder, and salt. Whisk the dry ingredients together until well-mixed.

    In another bowl, whisk together the milk, eggs, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are fine!

        In a small bowl, beat the softened cream cheese until smooth. Add powdered sugar and lemon juice, mixing until fully combined and creamy. Set aside.

          Preheat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter.

            Pour 1/4 cup of the pancake batter onto the skillet. Before the edges start to set, spoon 1 teaspoon of the cream cheese mixture onto the center of the batter. Top it with a few slices of fresh strawberries.

              Cook until bubbles form on the surface (about 3-4 minutes), then carefully flip the pancake and cook for another 2-3 minutes until golden brown and cooked through.

                Repeat the process with the remaining batter, adding more butter to the skillet as needed.

                  Serve the pancakes warm, topped with additional strawberries, whipped cream, and a drizzle of cream cheese mixture if desired.
