To make a fantastic steak frites recipe, you need just a few key ingredients. The best cuts of beef for steak frites are ribeye or sirloin. These cuts offer great flavor and tenderness. I prefer ribeye because it has a nice marbling that adds juiciness.

Ingredients

2 ribeye steaks (about 1-inch thick)

Salt and freshly cracked black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, smashed

2 sprigs of fresh rosemary

1 tablespoon unsalted butter

4 large russet potatoes, cut into fries

1 teaspoon paprika

1 teaspoon garlic powder

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Fries: Preheat your oven to 425°F (220°C). Rinse the cut fries in cold water to remove excess starch, then pat them dry with a towel.

Season the Fries: In a large bowl, toss the fries with olive oil, paprika, garlic powder, salt, and pepper until evenly coated. Spread them in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, turning halfway, until crispy and golden brown.

Cook the Steaks: While the fries are cooking, heat a cast-iron skillet over medium-high heat. Season both sides of the steaks liberally with salt and black pepper.

Sear the Steaks: Add the olive oil to the hot skillet. Once shimmering, add the steaks to the skillet along with the smashed garlic and rosemary. Sear without moving for about 4-5 minutes for medium-rare.

Flip and Baste: Flip the steaks and add butter to the pan. As the butter melts, tilt the pan slightly and use a spoon to baste the steaks with the melted butter and juices. Cook for an additional 3-4 minutes for medium-rare, or until desired doneness.

Rest the Steaks: Remove the steaks from the pan and let them rest on a cutting board for 5 minutes, covered loosely with foil, to allow the juices to redistribute.

Plate and Serve: Slice the steaks against the grain and serve alongside the crispy fries. Garnish with freshly chopped parsley.

                Prep Time: 15 minutes | Total Time: 1 hour | Servings: 2

                  - Presentation Tips: Arrange the fries in a paper-lined basket next to a neatly sliced steak on a rustic plate. Drizzle a little of the remaining butter from the skillet over the steak for a glossy finish, and serve with a small bowl of garlic aioli or ketchup for dipping.
