2 boneless beef steaks (about 1-inch thick)

Salt and freshly ground black pepper to taste

2 tablespoons olive oil

2 tablespoons unsalted butter

1 shallot, finely chopped

2 cloves garlic, minced

1 tablespoon Dijon mustard

1 cup beef broth (low sodium)

1 tablespoon Worcestershire sauce

1 tablespoon fresh parsley, finely chopped

1 tablespoon heavy cream (optional for creaminess)

Freshly ground pepper for garnish

Instructions
 

Start by seasoning the steaks on both sides with salt and black pepper. Let them sit at room temperature for about 15 minutes before cooking.

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks and sear for 3-4 minutes on each side for medium-rare (adjust cooking time according to desired doneness). Remove the steaks from the skillet and transfer them to a warm plate, covering loosely with foil to keep warm.

      In the same skillet, reduce the heat to medium and add the butter. Once melted, add the shallots and sauté for about 2 minutes, stirring frequently until softened.

        Add the minced garlic and cook for an additional 30 seconds until fragrant.

          Stir in the Dijon mustard, mixing well, then pour in the beef broth and Worcestershire sauce, scraping the browned bits from the bottom of the skillet to incorporate all flavors.

            Let the sauce simmer for about 5 minutes until slightly reduced. If you’re using heavy cream, stir it in and let it cook for another minute until heated through.

              Return the steaks to the skillet, spooning the sauce over them, and let them warm up for 1-2 minutes.

                Remove the skillet from heat and sprinkle with fresh parsley for garnish. Serve immediately with extra sauce drizzled over the steak.
