Ingredients

2 cups pasta (penne or rotini)

2 chicken breasts, diced

1 tablespoon olive oil

3 cups fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup sour cream

1 cup grated mozzarella cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until it's golden brown and cooked through, about 5–7 minutes. Season with salt, pepper, onion powder, and garlic powder. Remove the chicken from the skillet and set aside.

Prepare the Spinach Dip Mixture: In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Then add the chopped spinach and cook until wilted, about 2-3 minutes.

Combine Dip Ingredients: Lower the heat and add the cream cheese and sour cream to the skillet. Stir until the cream cheese has melted completely, forming a smooth sauce. Mix in the mozzarella and Parmesan cheeses, stirring until melted and well combined.

Combine Everything: Add the cooked pasta and chicken back into the skillet. Gently toss until the pasta and chicken are evenly coated in the spinach dip mixture. Adjust seasoning with more salt and pepper if needed.

Serve: Remove from heat and let sit for 2 minutes. Garnish with chopped fresh parsley before serving.
