Spicy Tomato Jam

Ingredients
  

2 lbs ripe tomatoes, chopped

1 cup granulated sugar

1/2 cup apple cider vinegar

1 tablespoon red chili flakes (adjust to taste)

1 teaspoon cumin powder

1 teaspoon smoked paprika

1 teaspoon salt

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon olive oil

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the chopped tomatoes to the pot and stir to combine with the onion and garlic mixture.

        Pour in the apple cider vinegar and add the sugar, chili flakes, cumin, smoked paprika, and salt. Mix well.

          Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for about 1 hour, stirring occasionally. The jam should thicken and reduce.

            After an hour, taste and adjust seasoning if necessary, adding more chili flakes for additional heat if desired.

              Once thickened to your liking, remove the pot from heat. Allow the jam to cool slightly before transferring it to sterilized jars.

                Let the jars cool completely at room temperature, then seal and refrigerate. The jam can be stored for up to 2 weeks in the fridge.
