Instructions
Cook the Noodles: Bring a large pot of salted water to a boil. Add the flat rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.
Prepare the Sauce: In a small bowl, mix together the soy sauce, chili paste, and brown sugar. Stir until the sugar is dissolved. Set aside.
Sauté Aromatics: In a large wok or skillet, heat the sesame oil over medium heat. Add the minced garlic, grated ginger, and sliced red chilies. Sauté for about 2-3 minutes until fragrant, being careful not to burn the garlic.
Combine Noodles and Sauce: Add the cooked noodles to the wok, followed by the prepared sauce. Toss gently to combine everything, ensuring the noodles are coated evenly with the sauce. Cook for another 3-4 minutes, stirring frequently.
Finish with Green Onions: Once the noodles are heated through, remove the wok from the heat and stir in the chopped green onions. Toss once more to mix.
Serve: Plate the spicy garlic chili noodles in bowls. Garnish with fresh cilantro and, if desired, a sprinkle of toasted sesame seeds.
