12 slices of bacon

12 small jalapeños, halved and seeded

1 package (8 oz) cream cheese, softened

1 cup shredded cheddar cheese

2 teaspoons chipotle powder

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

¼ cup chopped fresh cilantro (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chipotle powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.

      Take each jalapeño half and fill it generously with the cheese mixture using a spoon or piping bag.

        Carefully wrap each stuffed jalapeño half with a slice of bacon, ensuring to secure the filling. Use a toothpick to hold the bacon in place if needed.

          Place the bacon-wrapped jalapeño “pigshots” on the prepared baking sheet, cut-side up.

            Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and golden brown.

              Once cooked, remove from the oven and let cool for a few minutes.

                Garnish with fresh chopped cilantro and serve warm for the best flavor.
