4 large eggs

1 cup cooked black beans, drained and rinsed

1/2 cup diced bell pepper (red or green)

1/2 cup diced onion

1-2 chipotle peppers in adobo sauce, minced

1 teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

1 cup shredded cheese (cheddar or pepper jack)

Fresh cilantro, chopped for garnish

Hot sauce (optional, for serving)

Instructions
 

In a medium bowl, whisk together the eggs, minced chipotle peppers, smoked paprika, salt, and pepper until well combined.

    Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Sauté the diced onion and bell pepper until softened, about 5 minutes.

      Pour the egg mixture into the skillet with the sautéed vegetables. Stir gently, cooking until the eggs are just set, about 3-4 minutes.

        Add in the black beans and half of the shredded cheese, stirring to incorporate everything until heated through.

          Remove from heat and let the mixture cool slightly.

            Warm each tortilla in a separate skillet or microwave until pliable.

              To assemble, place a generous portion of the egg and bean mixture on each tortilla and sprinkle with the remaining cheese.

                Roll the tortillas tightly, folding in the sides as you roll them up to contain the filling.

                  Return the rolled burritos to the skillet seam-side down, cooking for 1-2 minutes on each side until golden and crispy.

                    Slice the burritos in half, sprinkle with fresh cilantro, and serve with hot sauce on the side if desired.
