1 lb (450g) boneless, skinless chicken thighs

1 tablespoon olive oil

1 large onion, diced

3 cloves garlic, minced

1 inch fresh ginger, grated

2 teaspoons ground turmeric

1 teaspoon ground cumin

1/2 teaspoon black pepper

4 cups low-sodium chicken broth

2 cups water

2 medium carrots, sliced

1 cup celery, diced

1 cup kale, chopped (or spinach)

1 tablespoon lemon juice

Salt to taste

Fresh parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes.

    Stir in the minced garlic, grated ginger, ground turmeric, ground cumin, and black pepper. Sauté for an additional 2-3 minutes until the spices are fragrant.

      Add the chicken thighs to the pot, stirring to coat them with the onion and spices. Cook for about 5 minutes.

        Pour in the chicken broth and water, bringing the mixture to a gentle simmer.

          Add the sliced carrots and diced celery, and let it simmer uncovered for about 20 minutes, or until the chicken is cooked through and tender.

            Remove the chicken thighs from the pot, shred them using two forks, and return the shredded chicken to the soup.

              Stir in the chopped kale (or spinach) and lemon juice, cooking for an additional 5 minutes until the greens are wilted.

                Season with salt to taste and adjust any other spices if desired.

                  Serve hot, garnished with fresh parsley for added color and flavor.
