1 cup unsalted butter, softened

3/4 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup mini marshmallows

1 cup graham cracker crumbs

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Add the egg and vanilla extract to the butter mixture and mix until well combined.

        In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

          Gently fold in the semi-sweet chocolate chips, mini marshmallows, and graham cracker crumbs until evenly distributed throughout the dough.

            Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving some space between each cookie as they will spread.

              Bake in the preheated oven for 10-12 minutes or until the edges are golden and the marshmallows have puffed up. The centers may look slightly underbaked; this is okay.

                Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
