2 pounds boneless turkey breast, skinless

1 cup cooked spinach, chopped and drained

1/2 cup ricotta cheese

1/2 cup sun-dried tomatoes, chopped

1/4 cup feta cheese, crumbled

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Preheat the Smoker: Preheat your smoker to 225°F (107°C). Soak wood chips (like hickory or apple) in water for 30 minutes and then drain.

    Prepare the Turkey: Place the turkey breast between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the turkey until it’s an even thickness of about 1/2 inch.

      Make the Filling: In a mixing bowl, combine the cooked spinach, ricotta cheese, sun-dried tomatoes, feta cheese, minced garlic, thyme, paprika, salt, and pepper. Mix well until all ingredients are fully incorporated.

        Assemble the Roulade: Lay the pounded turkey breast flat on a clean surface. Spread the filling mixture evenly over the turkey, leaving about an inch of space at the edges.

          Roll Up: Starting from one end, carefully roll the turkey tightly into a log shape. Use kitchen twine to tie the roulade at 1-inch intervals to keep the filling from escaping.

            Smoke the Roulade: Place the turkey roulade in the smoker and add your soaked wood chips to the coals. Smoke the turkey for about 2-2.5 hours, or until the internal temperature reaches 165°F (74°C).

              Rest and Slice: Once done, carefully remove the roulade from the smoker and let it rest for 10-15 minutes. Remove the twine and slice the roulade into rounds.
