1 pound smoked sausage, sliced

4 medium-sized russet potatoes, cubed

1 red bell pepper, diced

1 large onion, chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese

Chopped fresh parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the cubed potatoes, diced red bell pepper, chopped onion, and minced garlic.

      Drizzle the olive oil over the vegetables, and sprinkle with smoked paprika, dried thyme, salt, and pepper. Toss everything evenly until the vegetables are well coated.

        In a greased baking dish, spread the coated vegetable mixture to form an even layer.

          Scatter the sliced smoked sausage evenly over the top of the vegetables.

            Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

              After 30 minutes, remove the foil and stir the contents to ensure even cooking.

                Return the dish to the oven and bake uncovered for an additional 20 minutes, or until the potatoes are tender and lightly golden.

                  Remove the dish from the oven and sprinkle the shredded cheddar cheese over the top.

                    Place the dish back into the oven for another 5 minutes, or until the cheese is melted and bubbly.

                      Once done, let it cool for a few minutes, then garnish with chopped fresh parsley before serving.
