200g smoked salmon, thinly sliced

2 tablespoons capers, rinsed and drained

2 tablespoons olive oil

1 tablespoon fresh dill, chopped

1 tablespoon fresh chives, chopped

1 tablespoon fresh parsley, chopped

Zest of 1 lemon

Juice of 1/2 lemon

Sea salt and freshly cracked black pepper, to taste

Arugula leaves (for serving)

Optional: microgreens for garnish

Prepare the Capers: In a small skillet over medium heat, warm 1 tablespoon of olive oil. Add the rinsed capers and fry them for about 2-3 minutes until they are crispy. Remove from heat and let them drain on a paper towel.

    Plate the Salmon: On a large serving platter, arrange the smoked salmon slices in an overlapping pattern, creating a beautiful circular or fan-shaped design.

      Make the Herb Mixture: In a small bowl, combine the chopped dill, chives, parsley, lemon zest, and remaining tablespoon of olive oil. Mix well to integrate all flavors.
