2 lbs chicken thighs, boneless and skinless

1 cup creamy peanut butter

1/2 cup chicken broth

1/4 cup soy sauce (or tamari for gluten-free)

1/4 cup honey

2 tablespoons rice vinegar

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup chopped peanuts (for garnish)

1/4 cup green onions, sliced (for garnish)

Steamed jasmine rice (for serving)

Instructions
 

In a medium bowl, whisk together the peanut butter, chicken broth, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and red pepper flakes until smooth.

    Place the chicken thighs in the slow cooker and pour the peanut sauce mixture over the chicken. Ensure the chicken is well coated.

      Cover and cook on low heat for 6-7 hours or on high heat for 3-4 hours, until the chicken is cooked through and tender.

        Once cooked, use two forks to shred the chicken directly in the slow cooker and mix it with the remaining sauce.

          Serve the peanut chicken over steamed jasmine rice, garnished with chopped peanuts and sliced green onions.
