Instructions
Prepare the Chicken: Place the boneless chicken breasts at the bottom of the slow cooker.
Add Vegetables: Layer the halved cherry tomatoes, sliced red onion, and sliced red bell pepper over the chicken.
Season: Sprinkle the Kalamata olives and minced garlic evenly across the top of the vegetables.
Create Marinade: In a small bowl, whisk together olive oil, dried oregano, salt, black pepper, and lemon juice until combined.
Pour Over Ingredients: Drizzle the marinade over the chicken and vegetable mixture in the slow cooker, ensuring everything is evenly coated.
Cook: Cover the slow cooker and set it to low. Cook for 6-8 hours, or until the chicken is tender and easily shreds with a fork.
Serve: Once fully cooked, shred the chicken with two forks and mix it with the vegetables.
Garnish: Serve topped with crumbled feta cheese and a sprinkle of fresh parsley for added flavor and color.
