1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

2 cups beef broth

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup frozen mixed vegetables (like peas, carrots, and green beans)

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Shredded cheese (optional, for serving)

Instructions
 

Begin by browning the ground beef in a skillet over medium heat. Add the diced onion and minced garlic, cooking until the beef is fully cooked and the onions are translucent, about 5-7 minutes. Drain any excess fat.

    In your slow cooker, combine the cooked beef mixture with beef broth, kidney beans, black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper.

      Stir in the frozen mixed vegetables until evenly distributed.
