Instructions
Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the sliced chicken breast, bell peppers, and onion.
Drizzle the olive oil over the chicken and vegetables, then add the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
Squeeze the juice of one lime over the mixture and toss everything together until the chicken and vegetables are evenly coated with the oil and spices.
Spread the chicken and vegetable mixture evenly on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the veggies are tender, stirring halfway through for even cooking.
Remove from the oven and let it rest for a couple of minutes before serving.
Serve the chicken fajitas warm in tortillas and garnish with fresh cilantro.
