4 pork sausages (preferably British-style)

1 pound (450g) russet potatoes, peeled and cut into chunks

1/2 cup (120ml) whole milk

4 tablespoons butter

Salt, to taste

Pepper, to taste

1 tablespoon olive oil

1 medium onion, finely sliced

1 cup beef or chicken broth

1 tablespoon Worcestershire sauce

Fresh chives, finely chopped for garnish

Cook the Sausages: In a large skillet, heat olive oil over medium heat. Add the pork sausages and cook for about 10-12 minutes, turning occasionally, until they are browned and cooked through. Remove from heat and keep warm.

    Prepare the Mashed Potatoes: While the sausages are cooking, place the peeled potato chunks in a pot and cover with cold water. Add a pinch of salt and bring to a boil over high heat. Reduce to a simmer and cook for 15-20 minutes, or until tender when pierced with a fork.

      Make the Onion Gravy: In the same skillet used for the sausages, add the sliced onions and cook over medium heat until soft and caramelized (about 5-7 minutes). Pour in the broth and add Worcestershire sauce. Allow the mixture to simmer for 5 minutes to thicken slightly. Season with salt and pepper to taste.

        Mash the Potatoes: Once the potatoes are tender, drain them and return to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper according to your preference.

          Assemble the Dish: Serve a generous scoop of mashed potatoes on each plate, topped with sausages. Drizzle the caramelized onion gravy over the top.
