Ingredients

1 lb shredded beef (cooked and tender)

4 cups elbow macaroni

3 cups sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 medium onion, diced

3 cloves garlic, minced

3 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon smoked paprika

1 teaspoon mustard powder

Salt and pepper to taste

1/2 cup panko breadcrumbs

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Add the diced onion and sauté until soft, about 5 minutes. Stir in minced garlic and cook for an additional minute.

Create Roux: Sprinkle in the flour, stirring constantly for about 1-2 minutes until it turns light golden brown.

Add Milk and Spices: Gradually whisk in the whole milk until smooth. Add smoked paprika, mustard powder, salt, and pepper, and continue to whisk until the mixture thickens to a smooth consistency (about 5-7 minutes).

Incorporate Cheese: Remove the saucepan from heat and fold in sharp cheddar and mozzarella cheeses, stirring until fully melted and combined.

Combine: In a large bowl, combine the cooked macaroni, shredded beef, and cheese sauce. Mix well to ensure the beef and pasta are evenly coated in the cheesy goodness.

Prepare to Bake: Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish and pour the macaroni and beef mixture into it. Spread evenly.

Topping: In a small bowl, mix the panko breadcrumbs with a drizzle of olive oil (or melted butter) and a pinch of salt. Sprinkle the mixture evenly over the top of the macaroni and cheese.

Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden and crispy.

Serve: Remove from oven and let cool for a few minutes. Garnish with chopped parsley before serving.
