Ingredients

1 lb ground lamb (or beef, for variation)

1 medium onion, finely chopped

2 carrots, diced

1 cup peas (fresh or frozen)

2 cloves garlic, minced

2 tablespoons tomato paste

1 cup vegetable broth

1 tablespoon Worcestershire sauce (or soy sauce for a twist)

1 teaspoon dried thyme

Salt and pepper to taste

4 cups mashed potatoes (prepared with butter and cream for extra fluffiness)

1 cup shredded cheddar cheese (optional, for a cheesy topping)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Cook the Meat: In a large skillet, cook the ground lamb (or beef) over medium heat until browned. Drain excess fat if necessary.

Sauté Vegetables: Add the chopped onion, diced carrots, and minced garlic to the skillet. Sauté for 5-7 minutes, until the vegetables soften.

Add Flavors: Stir in the peas, tomato paste, Worcestershire sauce, vegetable broth, thyme, salt, and pepper. Bring the mixture to a simmer and let it cook for about 10 minutes until it thickens slightly.

Prepare Mashed Potatoes: While the filling simmers, prepare your mashed potatoes. If you haven't done so already, boil potatoes until tender and mash with butter, cream, salt, and pepper to taste.

Assemble the Pie: In a baking dish, spread the meat and vegetable mixture evenly at the bottom. Top with a generous layer of mashed potatoes, smoothing it out with a spatula. If desired, sprinkle cheese over the top for an extra kick.

Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.

Serve: Allow the Shepherd's Pie to cool for a few minutes before serving. Scoop out generous portions and enjoy!
