Ingredients
  

1 pound ground lamb (or beef, for a twist)

1 cup diced onion

1 cup diced carrots

1 cup peas (fresh or frozen)

2 cloves garlic, minced

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 cup beef stock

1 teaspoon fresh thyme (or 1/2 teaspoon dried)

1 teaspoon rosemary (fresh or dried)

Salt and pepper to taste

4 large russet potatoes, peeled and cubed

1/4 cup milk

4 tablespoons unsalted butter

Optional: 1 cup shredded cheese (such as cheddar or gouda) for topping

Instructions
 

Prep the Potatoes: Begin by boiling the cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and set aside.

    Cook the Meat: In a large skillet, heat 1 tablespoon of butter over medium heat. Add the diced onion and carrots, sautéing until they soften, about 5 minutes.

      Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.

        Brown the Meat: Add the ground lamb (or beef) to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

          Flavor It Up: Stir in the tomato paste and Worcestershire sauce, followed by the beef stock, thyme, rosemary, salt, and pepper. Bring to a simmer and let it cook for 10 minutes until slightly thickened. Mix in the peas and remove from heat.

            Mash the Potatoes: While the meat is cooking, return to the potatoes. Add the remaining butter and milk, mashing until smooth and creamy. Season with salt and pepper to taste.

              Assemble the Pie: Preheat your oven to 400°F (200°C). In a large baking dish, spread the meat and veggie mixture evenly, smoothing it out. Top with the mashed potatoes, spreading them evenly and creating peaks for extra crispiness. If using, sprinkle cheese on top.

                Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden and crispy.

                  Cool and Serve: Allow the shepherd’s pie to cool for a few minutes before serving.
