4 salmon fillets

1 bunch asparagus, trimmed

2 cups baby potatoes, halved

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon lemon zest

Juice of 1 lemon

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 425°F (220°C).

    In a bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, paprika, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet.

      Roast the potatoes in the preheated oven for 15 minutes.

        While the potatoes are roasting, in another bowl, combine the asparagus, minced garlic, lemon zest, lemon juice, thyme, and remaining tablespoon of olive oil. Season with salt and pepper.

          After 15 minutes, remove the baking sheet from the oven and stir the potatoes. Add the asparagus to the baking sheet, spacing it evenly around the potatoes.

            Place the salmon fillets on the sheet around the vegetables. Season the salmon with salt, pepper, and a little extra lemon juice if desired.

              Return the sheet pan to the oven and roast everything for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are crispy.

                Remove from oven and let it rest for a minute before garnishing with fresh parsley.
