1.5 lbs boneless, skinless chicken breasts, sliced into thin strips

2 bell peppers (one red, one yellow), sliced

1 medium red onion, sliced

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, for garnish

Tortillas, for serving

Instructions
 

Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the sliced chicken, bell peppers, red onion, olive oil, chili powder, cumin, smoked paprika, garlic powder, cayenne pepper, salt, and pepper. Toss everything together until the chicken and vegetables are well coated with the oil and spices.

      Spread the chicken and vegetables evenly on the prepared baking sheet in a single layer.

        Bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through for even cooking.

          Remove from the oven and squeeze fresh lime juice over the fajitas. Toss lightly to combine.
