Savory Tuscan Salmon with Creamy Sauce

4 salmon fillets (6 oz each)

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Prepare the Salmon: Season the salmon fillets with salt, pepper, and Italian seasoning on both sides.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets, skin-side down, and sear for about 4-5 minutes until golden brown. Flip the salmon and cook for another 3-4 minutes until it’s cooked through. Remove the salmon from the skillet and set aside.

      Make the Creamy Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.

        Add Spinach and Cream: Stir in the fresh spinach and cook until wilted. Pour in the heavy cream, bring to a low simmer, and add the grated Parmesan, stirring until it melts and thickens.

          Combine and Serve: Return the salmon to the skillet, spooning the creamy sauce over the top. Cook for an additional 2 minutes to heat everything through.

            Garnish and Plate: Serve the Tuscan salmon immediately, garnishing with fresh basil leaves for a burst of color and flavor.
