Ingredients
  

1 lb salmon fillet, skinless and boneless, cut into bite-sized cubes

4 tablespoons unsalted butter

2 tablespoons fresh lemon juice

1 teaspoon lemon zest

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

1 tablespoon olive oil

Lemon wedges, for serving

Fresh parsley, chopped, for garnish

Instructions
 

In a large mixing bowl, combine the salmon cubes with salt, pepper, and half of the lemon juice. Let it marinate for about 10 minutes to absorb the flavors.

    In a medium skillet, heat olive oil over medium heat. Add the salmon cubes in a single layer and cook for 2-3 minutes until they start to brown. Carefully flip the cubes over and cook for another 2-3 minutes until the salmon is cooked through but still tender. Remove the salmon from the skillet and set aside.

      In the same skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Do not let it burn.

        Stir in the remaining lemon juice, lemon zest, and fresh dill into the melted butter. Mix well to combine.

          Gently fold the cooked salmon bites back into the skillet, coating them with the lemon butter sauce. Cook for an additional 1-2 minutes to warm through.

            Remove from heat and serve immediately with lemon wedges on the side and a sprinkle of fresh parsley for garnish.
