8 oz fettuccine pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, chopped

10 oz fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 teaspoon nutmeg

Salt and pepper to taste

1/4 cup pine nuts, toasted

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 1 minute, until fragrant.

      Add Spinach: Stir in the chopped spinach and cook until wilted, about 3-5 minutes.

        Create the Cream Sauce: Pour in the heavy cream. Stir well and bring to a gentle simmer. Add the grated Parmesan cheese and nutmeg, stirring until melted and smooth. Season with salt and pepper to taste.
