Savory Cheesesteak Tortellini in Creamy Provolone Sauce

12 ounces of cheese tortellini (fresh or frozen)

1 pound of sirloin steak, thinly sliced

1 medium onion, thinly sliced

1 green bell pepper, thinly sliced

2 tablespoons olive oil

2 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

1 ½ cups provolone cheese, shredded

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the sliced onion and green bell pepper, and sauté until they are softened, about 5-7 minutes. Remove the vegetables from the skillet and set aside.

      Cook the Steak: In the same skillet, add another tablespoon of olive oil. Increase heat to medium-high and add the thinly sliced sirloin steak. Season with salt and pepper. Cook for about 4-5 minutes, or until the steak is browned and cooked to your liking. Add minced garlic during the last minute of cooking and stir well.

        Create the Sauce: Once the steak is cooked, reduce the heat to medium. Pour in the beef broth and allow it to simmer for 2-3 minutes. Then add the heavy cream and stir to combine, allowing the sauce to thicken slightly.

          Add the Cheese: Gradually stir in the shredded provolone cheese until it melts completely and forms a creamy sauce. Adjust seasoning with additional salt and pepper if needed.

            Combine: Add the sautéed vegetables back into the skillet along with the cooked tortellini. Gently toss everything together until well coated with the creamy provolone sauce.

              Serve: Divide the cheesesteak tortellini among serving plates. Garnish with freshly chopped parsley for a pop of color.
