2 large yellow onions, thinly sliced

1 cup of light beer (non-alcoholic option available)

200g salted pork belly, diced into small cubes

2 tablespoons olive oil

1 tablespoon brown sugar

1 tablespoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon fresh black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Prepare the Pork: In a large skillet over medium heat, add the diced salted pork belly. Cook until it is crispy and browned, about 8-10 minutes. Stir occasionally to avoid burning. Once cooked, remove the pork from the skillet and let it drain on a paper towel. Leave a few tablespoons of the drippings in the skillet.

    Cook the Onions: In the same skillet with the drippings, add the olive oil and sliced onions. Stir well to coat the onions in the fat. Cook on medium-low heat for about 15-20 minutes, stirring frequently, until the onions become soft and caramelized.

      Add Garlic and Seasonings: Once the onions are caramelized, add the minced garlic, brown sugar, thyme, and black pepper. Stir for another 2-3 minutes until the garlic becomes fragrant.

        Infuse with Beer: Carefully pour in the light beer and balsamic vinegar. Increase the heat slightly to let it simmer. Cook for an additional 10 minutes, allowing the onions to absorb the flavors of the beer and the mixture to reduce slightly.

          Combine with Pork: Stir the crispy pork back into the caramelized onion mixture. Cook for another 2-3 minutes until everything is heated through and well combined.

            Taste and Adjust: Season the mixture with salt if necessary, keeping in mind that the pork is already salty.
