Ingredients
  

1 lb shrimp, peeled and deveined

1 lb scallops, cleaned

½ lb calamari, sliced into rings

3 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 tablespoon fresh parsley, chopped

1 tablespoon fresh basil, chopped

1 lemon, zested and juiced

2 tablespoons olive oil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Cooked quinoa or rice for serving

Instructions
 

In a large mixing bowl, combine the shrimp, scallops, and calamari.

    Season the seafood with lemon juice, lemon zest, garlic, red pepper flakes (if using), salt, and pepper. Allow to marinate for at least 15 minutes to infuse the flavors.

      Heat olive oil in a large skillet over medium heat. Add the diced red bell pepper and sauté for 2-3 minutes until slightly softened.

        Add the marinated seafood to the skillet and cook for about 5-7 minutes, stirring occasionally, until the shrimp turn pink and the scallops are opaque and cooked through.

          Toss in the halved cherry tomatoes, cooking for an additional 2-3 minutes until they are warmed through and slightly blistered.

            Remove the skillet from heat and stir in freshly chopped parsley and basil for a burst of freshness.

              Serve the seafood mixture over a bed of warm cooked quinoa or rice, garnished with extra herbs if desired.
