Ingredients
  

1 pound Italian sausage (mild or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

4 cups chicken broth

1 can (14 oz) diced tomatoes, with juices

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional, for added heat)

4 cups kale, chopped (stems removed)

1 can (15 oz) cannellini beans, drained and rinsed

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or basil, for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Add the minced garlic, sliced carrots, and diced celery. Cook for an additional 5 minutes, stirring occasionally.

      Remove the casing from the Italian sausage, crumble it into the pot, and cook until browned, about 6-8 minutes.

        Stir in the diced tomatoes, chicken broth, oregano, smoked paprika, and red pepper flakes (if using). Bring to a simmer and let it cook for 15 minutes.

          Add the chopped kale and cannellini beans to the soup. Simmer for another 5-10 minutes, or until the kale is wilted and tender.

            Season with salt and pepper to taste.

              Serve hot, garnished with fresh parsley or basil on top.
