Sausage Cranberry Brie Bites

1 package of puff pastry (2 sheets), thawed

1 pound Italian sausage (mild or spicy, based on preference)

1 cup fresh or canned cranberry sauce

8 ounces Brie cheese, cut into small triangles

1 egg, beaten (for egg wash)

Fresh thyme leaves (for garnish)

Salt and black pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a skillet over medium heat, cook the Italian sausage. Break it into small pieces and cook until browned and cooked through (about 5-7 minutes). Drain any excess fat and season with salt and black pepper to taste. Set aside to cool slightly.

      Roll out the thawed puff pastry sheets on a lightly floured surface and cut each sheet into 3-inch squares.

        Place a square of puff pastry on the baking sheet and top each square with a small spoonful (about a teaspoon) of cooked sausage.

          Add a teaspoon of cranberry sauce on top of the sausage, followed by a triangle of Brie cheese.

            Fold the corners of the pastry square over the filling to create a pocket, pinching the edges together to seal them.

              Brush the tops of each pastry pocket with the beaten egg for a golden color when baked.

                Bake in the preheated oven for 15-18 minutes or until the pastry is puffed and golden brown.
