1.5 lbs red potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 tablespoon sweet Hungarian paprika

1 teaspoon smoked paprika

1 teaspoon caraway seeds

1 can (15 oz) diced tomatoes, with juice

4 cups vegetable broth

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat.

    Add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until fragrant.

        Sprinkle in the sweet Hungarian paprika, smoked paprika, and caraway seeds, stirring to combine for about 1 minute.

          Add the diced tomatoes (with juice) and vegetable broth to the pot, bringing the mixture to a gentle simmer.

            Add the diced red potatoes and bay leaf. Stir well to combine all the ingredients.

              Season with salt and pepper to taste and cover the pot, allowing it to simmer for 25-30 minutes, or until the potatoes are tender and cooked through.

                Remove the bay leaf and adjust the seasoning if needed.

                  Serve hot, garnished with fresh chopped parsley.
