12 lasagna noodles

2 tablespoons olive oil

1 pound ground beef

1 pound Italian sausage, casings removed

1 onion, chopped

2 cloves garlic, minced

2 cups fresh spinach, chopped

1 can (28 oz) crushed tomatoes

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

15 ounces ricotta cheese

1 egg

3 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on parchment paper to prevent sticking.

      In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 2-3 minutes until softened.

        Add the ground beef and Italian sausage to the skillet, breaking them apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

          Stir in the crushed tomatoes, tomato paste, oregano, basil, and season with salt and pepper. Allow the mixture to simmer for about 10 minutes.

            Add the fresh spinach to the sauce mixture and cook until wilted, about 2-3 minutes. Remove from heat.

              In a separate bowl, combine the ricotta cheese with the egg, a pinch of salt, and pepper. Mix until smooth.

                To assemble the lasagna, spread a thin layer of the meat sauce at the bottom of a 9x13 inch baking dish. Place 3 lasagna noodles over the sauce.

                  Spread half of the ricotta mixture over the noodles followed by a layer of meat sauce and a third of the mozzarella cheese. Repeat the layers: noodles, ricotta, meat sauce, and mozzarella, ending with three noodles topped with remaining meat sauce and all the remaining mozzarella and Parmesan cheese.

                    Cover the dish with aluminum foil (to prevent sticking, spray the foil with cooking spray) and bake in the preheated oven for 25 minutes.

                      Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and slightly golden.

                        Let the lasagna cool for about 10-15 minutes before slicing to allow it to set.
