Instructions
In a medium-sized bowl, combine the peanut butter and honey (or maple syrup). Mix until smooth and well-combined.
Add the vanilla extract and salt to the mixture and stir.
Gradually fold in the rolled oats until they are evenly coated with the peanut butter mixture. If desired, add a few drops of green food coloring to make the mixture festive.
Once combined, refrigerate the mixture for about 30 minutes to harden slightly, making it easier to shape.
After chilling, take small handfuls of the mixture and shape them into tree-like forms (triangular shapes) with a flat base. Aim for 2-3 inches in height.
Place the formed trees on a parchment-lined baking sheet.
For added decoration, melt some chocolate (in a microwave or double boiler) and drizzle it over the trees or dip the bottom of the trees in chocolate.
Sprinkle with crushed pretzels and edible glitter or star-shaped sprinkles for a festive touch.
Once decorated, return the trees to the refrigerator to set for an additional 30 minutes.
Serve as delightful holiday treats or package them up for festive gifts!
