Ingredients

2 salmon fillets

1 cup large shrimp, peeled and deveined

2 cups broccoli florets

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven to 400°F (200°C).

Prepare the broccoli: Steam the broccoli florets in a pot for about 5 minutes, until bright green and slightly tender. Drain and set aside.

Sauté the shrimp: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant. Add the shrimp and season with paprika, salt, and pepper. Cook for 3-4 minutes until they turn pink and opaque. Remove from heat.

Make the cheesy mixture: In a large bowl, combine the steamed broccoli, corn kernels, cheddar cheese, and cream cheese. Mix well until everything is coated.

Prepare the salmon: On a baking sheet lined with parchment paper, place the salmon fillets skin-side down. Drizzle with the remaining olive oil and lemon juice, then season with salt and pepper.

Assemble the dish: Top each salmon fillet with the cheesy broccoli and shrimp mixture, pressing gently to ensure it stays in place.

Bake the assembled salmon for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork and the cheese is melted and bubbly.

Garnish with fresh parsley before serving.
