Ingredients
  

1 lb fresh salmon fillet, skin removed

1/2 cup breadcrumbs (use panko for extra crunch)

1/4 cup finely chopped green onions

2 tablespoons fresh dill, chopped

2 tablespoons fresh parsley, chopped

1 clove garlic, minced

1 tablespoon lemon zest

1 tablespoon lemon juice

1 large egg, lightly beaten

Salt and pepper to taste

Olive oil for frying

Prepare the Salmon: In a mixing bowl, finely chop the salmon fillet or pulse it a few times in a food processor until coarsely chopped (avoid over-processing).

    Combine Ingredients: To the chopped salmon, add the breadcrumbs, green onions, dill, parsley, garlic, lemon zest, lemon juice, and the beaten egg. Season with salt and pepper. Mix everything gently until well combined, being careful not to overwork the mixture.

      Form Patties: Using your hands, form the mixture into small patties, about 2 inches in diameter, ensuring they are uniform in thickness. You should yield about 8-10 patties.

        Chill: Place the formed patties on a plate, cover with plastic wrap, and refrigerate for at least 30 minutes to help them hold their shape while cooking.

          Fry the Patties: In a large skillet, heat olive oil over medium heat. Once the oil is hot, carefully add the salmon patties (you may need to do this in batches). Cook for about 4-5 minutes on each side or until golden brown and cooked through.

            Drain and Serve: Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm.
