1 pound fresh asparagus, trimmed

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, drained

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves, for garnish

Balsamic glaze, for drizzling

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the trimmed asparagus, halved cherry tomatoes, and mozzarella balls.

      Drizzle the olive oil over the vegetables and cheese. Add minced garlic, oregano, salt, and pepper, then toss everything together until well coated.

        Spread the mixture evenly on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 15-20 minutes, or until the asparagus is tender and slightly caramelized, and the mozzarella is soft and slightly golden.

            Once done, remove from the oven and allow to cool for a couple of minutes.

              Plate the roasted asparagus and drizzle it with balsamic glaze. Garnish with fresh basil leaves before serving.
