2 tablespoons olive oil

Salt and freshly cracked pepper, to taste

1 teaspoon dried oregano

1 cup ricotta cheese

2 tablespoons honey

1 tablespoon lemon juice

4 slices of rustic bread (such as sourdough or ciabatta)

Fresh basil leaves, for garnish

Balsamic glaze (optional, for drizzling)

Preheat your oven to 400°F (200°C).

    In a bowl, toss the halved cherry tomatoes with olive oil, salt, pepper, and dried oregano until well coated.

      Spread the seasoned tomatoes on a parchment-lined baking sheet in a single layer and roast in the oven for 20-25 minutes, until they are blistered and caramelized.
