1.5 lbs beef chuck roast, cut into 1-inch cubes

2 tablespoons olive oil

1 onion, finely chopped

3 cloves garlic, minced

2 cups beef broth

1 can (15 oz) crushed tomatoes

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

8 oz pasta (penne or rigatoni)

1 cup heavy cream

1 cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

In a large skillet over medium-high heat, heat the olive oil. Add the cubed beef chuck roast and brown on all sides, about 5-7 minutes. Transfer the browned beef to your slow cooker.

    In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.

      Pour the sautéed onions and garlic over the beef in the slow cooker. Add the beef broth, crushed tomatoes, tomato paste, Worcestershire sauce, dried herbs, salt, and pepper. Stir to combine.

        Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and falls apart easily.

          About 30 minutes before serving, cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.

            Once the beef mixture is done, stir in the heavy cream and grated Parmesan cheese into the slow cooker, mixing well to create a creamy sauce.

              Gently toss the cooked pasta with the beef mixture in the slow cooker until well coated. Allow it to warm through for about 5 minutes.

                Taste and adjust seasoning if necessary, then serve hot.
