2 ribeye steaks (about 1 inch thick)

Salt and black pepper, to taste

1 tablespoon olive oil

2 large onions, thinly sliced

1 tablespoon butter

1 teaspoon sugar

1 tablespoon balsamic vinegar

1 teaspoon thyme (fresh or dried)

4 medium potatoes, cut into fries

2 tablespoons vegetable oil (for frying)

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Start by soaking the cut potatoes in cold water for at least 30 minutes to remove excess starch. This will help make them crispier when fried. After soaking, drain and pat dry with paper towels.

    Cook the Onions: In a pan, heat the butter and olive oil over medium heat. Add the sliced onions, sprinkle with a pinch of salt, and sauté until caramelized (about 15-20 minutes). Stir in the sugar and balsamic vinegar, and cook for an additional 5 minutes until the onions are deeply golden and syrupy. Season with thyme and set aside.

      Fry the Potatoes: In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat (about 350°F/175°C). Carefully add the fries in batches and fry until they are golden brown and crispy (about 5-7 minutes). Use a slotted spoon to remove the fries and drain them on paper towels. Season with salt immediately.

        Prepare the Ribeye Steaks: While the fries are cooking, season the ribeye steaks generously with salt and black pepper on both sides. Heat a grill pan or cast-iron skillet over high heat until hot. Add the olive oil and then the steaks. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let rest for 5 minutes before slicing.

          Assemble the Dish: To serve, slice the ribeye steaks against the grain and place them on a plate. Top with the caramelized French onions and serve alongside a generous portion of crispy French fries.
