4 cups red cabbage, finely shredded

1 cup carrots, grated

1/2 cup green onions, chopped

1/2 cup fresh parsley, chopped

1/4 cup apple cider vinegar

2 tablespoons honey or maple syrup

1 tablespoon Dijon mustard

1/4 cup olive oil

Salt and pepper, to taste

Optional: 1/4 cup sunflower seeds or chopped nuts for topping

Instructions
 

In a large mixing bowl, combine the shredded red cabbage, grated carrots, chopped green onions, and parsley. Toss to mix evenly.

    In a small bowl, whisk together the apple cider vinegar, honey (or maple syrup), Dijon mustard, olive oil, salt, and pepper until well blended to form the dressing.

      Pour the dressing over the cabbage mixture and toss gently to coat all the vegetables evenly.

        Let the slaw sit for at least 15 minutes to allow the flavors to meld. This can be refrigerated for up to an hour if you want it colder.

          Just before serving, sprinkle the sunflower seeds or chopped nuts on top for added crunch and flavor.
