1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup milk

1 cup fresh raspberries

2 cups shredded coconut

1 cup powdered sugar

1/4 cup unsweetened cocoa powder

1/2 cup water

Preheat Oven: Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan.

    Mix Dry Ingredients: In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, blend in the vanilla extract.

          Combine Ingredients: Gradually add the flour mixture into the butter mixture, alternating with the milk. Start and end with the flour mixture. Stir until just combined.

            Fold in Raspberries: Gently fold in the fresh raspberries until evenly distributed throughout the batter.

              Bake the Cake: Pour the batter into the prepared baking pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Cool the Cake: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

                  Prepare the Chocolate Coating: In a saucepan, mix together the powdered sugar, cocoa powder, and water over medium heat until smooth and slightly thickened (do not boil).

                    Coat the Cake: Once the cake is completely cool, cut it into squares or rectangles. Dip each piece into the chocolate mixture, making sure to coat all sides well.

                      Roll in Coconut: Immediately roll the chocolate-coated cake pieces in shredded coconut until fully covered.

                        Set and Serve: Place the finished lamingtons on a plate or wire rack and let them set for about 30 minutes. Serve fresh or store in an airtight container.
