Ingredients

12 large portobello or cremini mushrooms, stems removed

1 cup cream cheese, softened

1/2 cup sour cream

1 packet ranch seasoning mix (about 1 oz)

1/2 cup shredded cheddar cheese

1/4 cup chopped green onions

1/4 cup crispy bacon bits (optional for a non-vegetarian option)

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Olive oil for brushing

Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the softened cream cheese, sour cream, ranch seasoning mix, shredded cheddar cheese, chopped green onions, and bacon bits (if using). Mix well until creamy and evenly combined.

Taste the mixture and season with salt and pepper if needed; remember that the ranch seasoning will add flavor.

Brush both sides of the mushrooms with olive oil to prevent sticking and enhance the flavor.

Use a spoon to fill each mushroom cap generously with the ranch-infused mixture.

Place the stuffed mushrooms on the prepared baking sheet, filling side up, and sprinkle with parsley for added color.

Bake in the preheated oven for about 20-25 minutes or until the mushrooms are tender and the topping is golden and bubbling.

Remove from the oven and let cool for a few minutes before serving.
