2 packs instant ramen noodles (discard the seasoning packets)

2 tablespoons vegetable oil

1 cup broccoli florets

1 bell pepper (red or yellow), sliced

1 cup snap peas

2 carrots, julienned

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon red pepper flakes (optional)

2 tablespoons sesame seeds for garnish

Cook the Noodles: In a pot, bring water to a boil, add the ramen noodles, and cook for 3-4 minutes until slightly undercooked. Drain and rinse with cold water to stop the cooking process. Set aside.

    Heat the Oil: In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat.

      Sauté the Vegetables: Add the minced garlic and grated ginger to the hot oil, stirring for about 30 seconds until fragrant. Then, add the broccoli florets, bell pepper slices, snap peas, and julienned carrots. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

        Combine Noodles and Sauce: Add the cooked ramen noodles to the skillet. In a small bowl, whisk together soy sauce, sesame oil, honey (or maple syrup), and red pepper flakes. Pour this sauce over the noodles, tossing everything together to ensure it's uniformly coated. Stir-fry for another 2-3 minutes to heat through.

          Final Touch: Add chopped green onions and stir well. Adjust seasoning if necessary.
