400g mushrooms, sliced (a mix of cremini and shiitake for depth of flavor)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

4 cups vegetable broth

1 cup coconut milk (full-fat for creaminess)

2 teaspoons dried thyme

1 teaspoon onion powder

1 tablespoon nutritional yeast (for a cheesy flavor)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and sliced mushrooms to the pot. Cook, stirring occasionally, until the mushrooms are browned and have released their moisture, about 8–10 minutes.

      Sprinkle in the dried thyme and onion powder, and stir well to combine with the mushrooms.

        Pour in the vegetable broth and bring the mixture to a simmer. Allow it to simmer for about 10 minutes to let the flavors meld.

          Remove the pot from heat. Use an immersion blender to puree the soup to your desired consistency. If you prefer a chunkier texture, puree just half of the soup and leave some mushrooms whole.

            Stir in the coconut milk and nutritional yeast, mixing until well combined. Add salt and pepper to taste.

              Return the pot to low heat for a few minutes to warm through, stirring occasionally.

                Serve hot, garnished with fresh parsley.
