2 cups shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1 cup chorizo, casing removed and crumbled

1 small onion, finely chopped

1 jalapeño, deseeded and minced

2 cloves garlic, minced

1/2 cup diced tomatoes (canned or fresh)

1/4 cup cilantro, chopped

2 tablespoons olive oil

Tortilla chips or soft tortillas, for serving

Optional toppings: sliced avocado, sour cream, and additional cilantro

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and jalapeño to the skillet, cooking for an additional 2 minutes until fragrant.

      Stir in the crumbled chorizo, cooking until it's browned and cooked through, about 5-7 minutes.
