Ingredients
  

2 cups of white cheddar cheese, shredded

1 cup of Monterey Jack cheese, shredded

1 cup of heavy cream

1 small onion, finely chopped

1 jalapeño, deseeded and finely chopped

1 garlic clove, minced

2 tablespoons of butter

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a medium saucepan, melt the butter over medium heat.

    Add the chopped onion and sauté until translucent, about 4-5 minutes.

      Stir in the minced garlic and chopped jalapeño, cooking for an additional 2-3 minutes until fragrant.

        Lower the heat and pour in the heavy cream, stirring constantly until warmed but not boiling.

          Gradually add the shredded white cheddar and Monterey Jack cheese to the cream mixture, stirring continuously until the cheese is fully melted and smooth.

            Season with salt and pepper to taste, adjusting to your preference.

              Remove from heat and stir in fresh cilantro for an aromatic finish.

                Serve immediately with warm tortilla chips for dipping.
