12 oz rigatoni pasta

2 cups pumpkin puree (canned or fresh)

1 cup grated Gruyere cheese

1 cup heavy cream

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried sage

1/2 teaspoon nutmeg

Salt and black pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Begin by bringing a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente, usually about 10-12 minutes. Reserve 1 cup of the pasta cooking water, then drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the pumpkin puree to the skillet, mixing well with the onion and garlic.

          Pour in the heavy cream and stir until the mixture is smooth. Reduce the heat to low and let it simmer for about 5 minutes, allowing the flavors to meld.

            Stir in the grated Gruyere cheese until it melts into the sauce, followed by the dried sage, nutmeg, salt, and black pepper. If the sauce is too thick, gradually add some reserved pasta water until reaching your desired consistency.
