2 cups pulled pork (cooked and shredded)

1 bag tortilla chips (about 12 oz)

1 cup sharp cheddar cheese, grated

1 cup pepperjack cheese, grated

1/2 cup black beans, drained and rinsed

1/2 cup corn (fresh, frozen, or canned)

1/4 cup pickled jalapeños (or fresh, to taste)

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup sour cream

1/4 cup barbecue sauce

1 teaspoon smoked paprika

Salt and pepper to taste

Lime wedges for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the pulled pork with smoked paprika, salt, and pepper. Mix well until the pork is evenly seasoned.

      On a large baking sheet, spread out the tortilla chips in an even layer.

        Scatter the seasoned pulled pork evenly over the chips.

          Evenly distribute the black beans and corn over the pulled pork.

            Generously layer the sharp cheddar and pepperjack cheese over everything.

              Sprinkle the pickled jalapeños on top to add some heat.

                Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and let it cool for a couple of minutes.

                    Top the nachos with diced avocado, fresh cilantro, and a drizzle of barbecue sauce.

                      Serve with sour cream and lime wedges on the side for drizzling or dipping.
